We’re all supposed to eat more fish… right? Well, my family doesn’t really care for fish…. but I do ! So, in my personal quest to become healthier, I bought some nice salmon. And, since the rest of the family doesn’t care for fish, I decided to make it for lunch instead of subjecting the whole family to such a yummy dish for dinner! lol.
Filet of salmon (I like mine thoroughly cooked in a little extra virgin olive oil) with wilted spinach and a some large diced cucumbers and Roma tomatoes. I finished it off with a drizzle of lemon dill yogurt sauce! This is a big lunch for me, but I’m NOT sharing! lol
